Fisu ja Ranet is one of the pioneers of the new wave of Finnish street food, and their philosophy is to keep it tight and focus on what is relevant. The restaurant uses MS-certified fish that is captured using sustainable fishing principles. Potatoes are Finnish potatoes from the Oulu region and have been produced using bio-energy. The restaurant’s famous remoulade sauce is made in-house, and to honor the tradition, they use real malt vinegar and top the serving with a slice of fresh lemon. Just the way it should be.
